Each "cheesemonger choice" box includes a weekly selection of cheeses from The Bloomy Rind, meaning what you get will be a surprise from week-to-week! Every week is different. The mix will include a variation of styles and textures, and the sizing will either be whole wheels of small format cheeses or generous wedges for cut wheels. There are two sizes available and everything will be labeled by the monger herself. An important message from The Bloomy Rind:

Most of the cheeses we’ll be sending out are from regional and domestic cheesemakers who desperately need to sell product right now, especially the soft cheeses that can’t age out. Safety first: The Bloomy Rind is licensed and inspected by the TN Department of Ag. All of our cheese producers are licensed and inspected by their respective state agencies. We are based in Citizen Kitchens, which is not open to the general public. The cheese is only handled by cheesemonger Kathleen with gloved hands on sanitized surfaces that are used only by us. We will package your order in a to go box or bag, so delivery folks are only handling the container, not any of the individual cheeses. Your health and safety is our #1 concern - now and always.

The agaves were crushed into an Egyptian stone mill, known as tahona, the liquid was fermented in oak vats, double distilled in copper stills and rested in white oak barrels for 2 years. For Cuna de Piedra's cocoa beans from Comalcalco, Tabasco, They developed a high roasting profile which complements the woody notes of the final distillate.

Most of these salt makers are reaching an advanced age, and many young people in the community are migrating in search of better economic opportunities, while the land is being sold off for onyx extraction. Slow Food International designated this salt with the title of Presidia in 2018 to promote its historical, cultural, and gastronomic value.

Scorpion Pepper 72% (Dark Chocolate) - This chocolate isn’t a badge-of-honor experience meant to burn you from the inside out; the use of The Scorpion is judicious, tasting the fruit notes of both the pepper and the cacao. Ingredients: cacao, sugar*, house-dried trinidad scorpion peppers. All *mean certified organic ingredient.

Peru 70% (Single origin) - CAC Pangoa, a large cooperative with over 700 farmer members, is at a crossroads. Most of their cacao production is undifferentiated “commodity cacao.” But under the leadership of Esperanza Dionisio Castillo, with support from an organization called Conservation Cacao, the members are being encouraged and trained to devote a portion of their production to fine flavor varietals with more attention given to the quality of harvest and fermentation. Conservation Cacao’s mission is to save the rainforest through sustainable cacao. Our Peru 70% bar brings this effort to fruition. This two-ingredient single-origin chocolate contains 70% cacao and has a cinnamon bark aroma. The flavor
profile is tart cherry and lemon, over a creamy cocoa base.
